Cooking Classes in Italy & New York City

No other country in the world blends food, family, friends and daily life than Italy. That's why, in order to become a top Italian chef, it takes much more than simply learning the traditional dishes offered from Northern and Southern Italy. It requires Total ImmersionSM and the opportunity to become completely absorbed in Italian food, culture, and language. This is the focus of The Italian Culinary Experience.

As a student in The Italian Culinary Experience, you will experience one of the most well-rounded chef training programs available anywhere. These unique cooking classes will split your time between New York and Italy, allowing you to first learn all about Italian food, culture and language before embarking on a one-of-a-kind journey to Parma, Italy. There you'll attend the world-renowned cooking school, ALMA, to receive side-by-side training with expert Italian chefs in fully-equipped, avant-garde chef training and cooking facilities in the magnificent Palazzo Ducale in Colorno.

At ALMA, the International School of Italian Cuisine, you will develop your skills through an exhilarating 9 weeks of comprehensive cooking classes in Italy, led by Gualtiero Marchesi, the leading representative of Italian cuisine in the world, and the first to receive 3 Michelin stars. During your chef training, you will learn the following about Italian food and culture:

  • History of Italian Cuisine
  • Before beginning your cooking classes in Parma, Italy, you will be immersed in the birth and development of regional cuisine and gain a full understanding of the basis of Italian regional food by experiencing the culture first-hand.

  • Guest Chef Demonstration
  • While in Italy, a minimum of 16 Guest Chefs will attend your cooking school and demonstrate how to prepare traditional dishes from the region. These one or two star Michelin® Guide Guest Chefs will conduct at least 6 hours of chef training and thoroughly demonstrate how to cook some of the finest dishes in all of Italy.

  • Knowledge of Products and Raw Materials
  • As part of your cooking classes in Italy, you will gain a comprehensive understanding of the raw materials and products that go into Italian cuisine, and you will acquire the valuable knowledge and experience needed to be a top Italian chef.

  • Cooking Practice and Recipes
  • This core course of the chef training program focuses on teaching students how to prepare, cook, and present Italian cuisine in a professional way. Concentrating on technique and regional recipes, you will be immersed in hands-on training and demonstrations designed to sharpen your skills and prepare you for a career as a professional Italian chef.

  • Wines
  • Incorporated into your inclusive cooking classes in Italy, you will also gain an full understanding of how wine plays an important role in Italian food and culture; further, you'll learn about the technological aspects and regional characteristics of their distinct wine.

  • Pastry
  • Just as important in Italian cuisine as wine are pastries. During this course, your chef training will consist of learning to prepare an array of the most significant Italian sweets and cakes in the region, including zuccotto, zuppa inglese, panettone, pandoro, and many more.

  • On-Site Visits
  • Five days of your chef training at ALMA will be dedicated to visiting production sites responsible for producing some of the most recognizable meat, pasta, wine, and vinegar that make up the renowned Italian food and culture.

  • On Stage
  • After your in-school chef training, you will be assigned to a noted Italian restaurant where you will receive an additional 9 weeks of intensive in-house training, experiencing exclusive regional cuisine and intense pressure in a "real life" environment. The staging period will allow you to put the skills acquired during your cooking classes in Italy to work in pressure situations.

Unlike the sustained commitment of our cooking classes in Italy, our Essentials of Italian Cooking program is a short, yet comprehensive, 40-hour course designed to work around your busy schedule. This course offers unique, well-rounded chef training using our Total ImmersionSM approach and are designed to give students a wide range of skills and techniques.
