FCI - Cooking Schools in Italy & New York

The Italian Culinary Experience offers a once-in-a-lifetime opportunity to not only learn Italian cooking in New York City, but to attend ALMA, one of the finest cooking schools in Italy, where you'll spend nine weeks honing your craft under the tutelage some of the country's best chefs. Your Total ImmersionSM begins with the history of Italian cuisine, Italian language instruction, and study of the important relationship shared by Italian cuisine and culture. After this week-long immersive education, you'll begin an intensive hands-on study of all aspects of the preparation and presentation of Italian Cuisine.

  • Stocks and Sauces: A good soup relies upon a good stock, and you'll learn everything about stocks, soups, and sauces from ingredient selection to the final product; you'll also learn how to prepare a wide variety of legumes and grains;
  • Pasta: Making pasta is a keystone to any Italian culinary instruction; in your Italian cooking courses in New York City, you'll learn not only how to make fresh pasta such at chitarra, but you'll learn more about the history of Italian cooking in your investigation into the various traditional regional pasta shapes. Additionally, you'll learn to fully prepare the many varieties of filled pasta such as tortellini and agnolotti, and the intricacies of matching the flavors of the perfect sauce with the perfect pasta. Further, your instruction in pasta making will include the many types of gnocchi, polenta, and types of rice such as arbolio and carnaroli.
  • Fish and Seafood: Cuttlefish, eel, octopus, shrimp, shellfish, lobster, flat and round fish. You'll learn how to determine seafood's freshness, scaling, trimming, gutting, and filleting, and how to cook, serve, and plate all types of seafood.
  • Meats: From purchasing the finest cuts to fabrication and storage, you'll learn the many techniques involved in the preparation of meats, including poultry, beef, lamb, and pork. The Italian cooking methods we teach include grilling, sautéing, broiling, broasting, deep-frying, pan frying, braising, and roasting.
  • Contorni/Side Dishes: Our expert Chef-Instructors will teach you the Italian cooking methods and techniques used to prepare a wide variety of vegetables, greens, and salads.
  • Italian Pastry and Other Desserts: From crostate to cannoli, tiramisu to gelato, your Italian Cooking Experience includes the many types of Italian pastry and desserts.

A crucial part of learning Italian cuisine is to take your instruction beyond simply learning methods in New York's cooking schools to Italy itself, being deeply immersed in traditional methods and further honing your language skills and your intimate knowledge of the history of Italian cooking and its deep roots in the country's culture. Immediately following your ten weeks in New York City, you'll fly to Parma, Italy to continue your Total ImmersionSM instruction at ALMA, The International School of Italian Cuisine, one of the finest and most highly regarded cooking schools in Italy. You'll find yourself elbow-to-elbow with Michelin-rated Italian chefs, learning Italian cooking methods and the ins-and-outs of the professional Italian kitchen.

  • The History of Italian Cooking: You'll be educated in the birth and development of traditional regional Italian recipes, and gain deep insight into the relationship of Italian cuisine to the region and culture.
  • Guest Chef Demonstration: Unique among cooking schools in Italy, the Italian Cooking Experience features instruction by no fewer than sixteen one or two star Michelin Guest Chefs, with each lesson running six hours.
