Turn out delectable creamy custard filled tarts, or tangy tarts of glazed fruit nestled in a buttery rich pastry rolled out to fit a tart pan or free formed to suit your fancy. The choices are endless once you acquire the fundamental building blocks necessary to making all pastry.
Tarts and More is a 25-hour, 5-day program that artfully combines demonstration with hands on instruction so you can gain a real understanding of the many techniques used in baking traditional tarts. Working in the same kitchens used for our professional courses you’ll learn, the 3 basic tart dough types used for tarts and cookies, 3 varieties of custard and meringues, decorative techniques such as piping, royal icing and ganache, as well as poaching and arranging fruit for decoration.
During your 5 days of demonstration, hands on instruction and individual attention of our Chef-Instructors you will gain ease in the proper use of tools used for mixing dough and spreading filling as you prepare at least 2 different tarts and cookies daily.
As a result of taking Tarts and More, you will acquire the following skills:

  • Knowledge of making basic tart doughs, fillings and toppings
  • Familiarity with measurements, mixing methods, knife skills for slicing
  • Recognition of the proper use of tools used for mixing dough and spreading fillings
  • Understanding of decorative techniques for finishing tarts such as piping and arranging fruit for decoration
