Culinary Programs

At The French Culinary Institute, our culinary programs will help you acquire real-world experience and prepare you for a high-level culinary career. Our challenging Total ImmersionSM curriculum has been carefully crafted by some of the world's most distinguished master chefs. These comprehensive culinary programs are then implemented by our faculty of notable culinary experts and guest chefs. Our fast-paced curriculum prepares you for the workforce in months (or weeks) instead of years. You'll leave The FCI with the skills and credentials required to set yourself apart. Not only will you learn French cuisine, our Classic Culinary Arts program will teach you the building blocks of all great cuisine quickly and thoroughly. Designed by true masters, this culinary program is essential for aspiring professional chefs. The masters that have designed this curriculum include:

  • Chef Jacques Pépin - known as "the Zen master of technique".
  • Chef André Soltner - uses years of knowledge to create dishes that are simple, yet brilliantly nuanced.
  • Chef Alain Sailhac - his experience and reputation are known throughout the world.

To work with masters like these, you'll need the culinary programs at The FCI. Our Culinary Arts programs can be completed in 6 months by day, or 9 by night. You will receive the equivalent of years of experience in our rigorous, hands-on environment. Our distinguished Chef-Instructors guide you through our culinary programs, working side-by-side with you the entire way.

Another thing that sets our culinary programs apart is our unparalleled student-teacher ratio of 12:1. All of our culinary programs provide aspiring chefs with the dedicated demonstration and guidance they need, enabling them to truly learn not only by doing, but also through example. Learn the chemistry and the artistry of baking fine artisan breads! If you're interested in artisan breads, the FCI also offers several different career and amateur culinary programs that specialize in the art of bread baking.

Part of our career culinary education programs here at the FCI, The Art of International Bread Making provides you with the techniques and sensibilities of major artisan breads in a convenient eight-week course. Upon completion, you'll be provided with a sophisticated skill set to help any career in bread baking truly "rise" to the occasion.

If you prefer not to commit to all 240 hours of training within our career baking program, we also offer our Classic European Breads amateur cooking course. This 120-hour course covers all the essentials of Europe's artisan breads, from baguettes to kaiser rolls. Or, consider our short 30-hour course, Essentials of Artisanal Bread Baking, which provides a helpful overview of artisan breads from around the world.
